Culinary Director
Eli’s Manhattan is Eli Zabar’s gourmet market on 80th and 3rd avenue. For the last 50 years Eli has been serving the highest quality prepared foods, artisanal breads, produce, fish, meat and wines.
We are looking for a seasoned and talented executive chef with experience in high volume, production, catering, and prepared foods experience. In this role you will work with Eli to maintain our classic dishes, create new recipes, and improve consistency across all locations and menus. This job requires a true understanding of how to prepare fresh and seasonal ingredients. The right candidate must have a true understanding of how ingredients or dishes maintain appearance over time and how lasting flavor is developed. This is a from-scratch kitchen.

Responsibilities include but are not limited to:
- Supervise, train, schedule, support and mentor a kitchen team of 76 working in multiple locations
- Oversee kitchen, kitchen prep, procedures, portioning, and execution
- Ensure food quality by adhering to brand standards at all times
- Recipe development plus teaching, and maintaining all recipes and techniques.
- Manage labor costs by achieving budget hours and budget labor targets
- Oversee food inventory on a weekly basis and adhere to food cost budgets
- Understand and maintain culinary aspects of profit and loss statement
- Sourcing, ordering and receiving the highest quality ingredients.
- Maintain purveyor/vendor relationships
- Maintain all kitchen equipment in good working order with the support of in-house mechanics
- Maintain high standards of cleanliness and organization
- Comply with local DOH health and safety codes to ensure company safety and security policies
- maintain an "A" health inspection rating at all times

Pay: $125,000.00 - $150,000.00 per year + bonus
