Directly supervises food-service associates in accordance with policies, procedures and applicable laws. Prepares food in accordance with applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures. Ensures quality food service is provided at all times. Maintains 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurement requirements.Essential Duties and Responsibilities:Stores all sushi produce, seafood, and grocery items with Sushi Prep Cook to the 310 Provisions Sushi StandardsCuts and prepares seafood and garnishesMakes nigiri, slice sashimi, roll sushi, handrolls, and other limited time offeringsTo fill out temperature logs and help record end of service inventory counts of 80/20 itemsBasic knowledge of all kitchen and sushi equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, steam kettles, rice cookers, and maki machineAbility to inventory product, read menus (BEOs, Restaurant Orders) and estimate food requirements to create a production planMaintains 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurements requirementsKnowledge understanding of food safety and sanitation guidelines including temperature requirements and HACCP (Hazard Analysis and Critical Control Points) while understanding the science in cooking temperaturesResponsible for checking and maintaining proper temperatures throughout preparation, cooling, holding and serving of food items including adjusting thermostat controls to regulate temperaturesObserves and tests food being cooked/ prepared by tasting, smelling and piercing with cooking utensil to determine that food is cooked/ prepared properly, according to specifications.Cleans kitchen equipmentAbility to handle special dietary requests for catering and premium guests/ eventsCreates seasonings, cures and rubsMust demonstrate advanced culinary technical skills required in food preparation and use of kitchen equipmentMust demonstrate ability to present and discuss menu item preparation with Prep Cooks, Front of House team, leadership, and GuestsMaintains good working relationships with coworkers, customers, administrators and managers.Performs job safely while maintaining a clean, safe work environment.Performs other duties as assigned.Skills and QualificationsPassion for Culinary and delighting our Guests with food!Minimum 2 years experience in culinary field with a focus on high volume productionCulinary Education Degree or equivalent experience required with less than 2 years experienceMust be at least 18 years of age to be considered for this roleProficient knife skillsProven knowledge of culinary techniques and terminologyProven ability to read and understand recipesOrganizational skills; Ability to multi task and work in a very fast paced team environmentSpeed, accuracy and efficiency are required and ability to work well under pressureAbility to adapt to production requirementsPreferred Education:Vocation School training or High School certificationCulinary Education Degree or equivalentCertification from CIA or equivalentBasic Wine KnowledgeRecommendation from schoolApply to Levy today!Levy is a member of Compass Group USAClick here to Learn More about the Compass Story ( Group is an equal opportunity employer.
