BRASS a not-so-traditional brasserie coming to a historic Nomad hotel from an acclaimed culinary team, is seeking experienced, career oriented Line Cooks. Joining its sister The Tusk Bar, newly named one of Esquire’s best bars in America, at the Evelyn Hotel, BRASS will pay homage to the grand dining rooms of Gilded Age New York. Taking inspiration from the improvisational spirit of the Jazz Age, BRASS’s striking white table-clothed room balances uptown grandeur with downtown energy. The chefs’ playful and informal style of cooking at BRASS will be guided by, but without strictly adhering to, the influence of French brasseries. 


With Michelin starred culinary partners (co-chefs Jeremiah Stone and Fabian Von Hauske Valtierra, the duo behind the Lower East Side’s Wildair) and an experienced Front of House team, we are looking for exceptional team members to join the project who share our dedication, passion for hospitality and a desire to grow with this ambitious hotel project.


The Line Cook position at BRASS  will be filled by hospitality industry professionals who seek to exceed guest expectations with a passion for food and drink, grace, thoroughness, efficiency, diligence, and style.


Desired qualifications:

  • Desire  to learn and join an opening team
  • Professional, guest-centric individuals who have a passion for service execution with care and consistency
  • 2+ years of prior experience as a Line Cook in a well-established restaurant
  • Strong knowledge of classic cooking techniques
  • Ability to adapt to menu changes
  • Actively practice food safety procedures
  • Effective time management and organizational skills
  • Positive and clear written and oral communication skills
  • Ability to think quickly and multi-task in a fast-paced environment

PHYSICAL REQUIREMENTS

  • Must be able to lift and carry up to 25 lbs
  • Ability to stand for prolonged periods of time
  • Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the work area and property. Bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
  • Climbing steps regularly

We are seeking individuals who are committed to working at a high level of attention to detail, teamwork, guest experience and operational excellence.  Working weekends and holidays is a requirement of the role.
