Summary:
Assist the Sushi station with passion for the products Lassens provides. Provides entry level to intermediate skills with regards to preparation, setup, and execution of Lassens sustainable sushi menu. Lassens uses only environmentally responsible seafood products as a means of preserving the art of sushi and the health of the world's oceans
Responsibilities:
1. Give customers immediate and undivided attention
2. Responsible for the production and have experience of making of Maki Sushi, and knowledge of Nigiri Sushi, and Sashimi
3. Work with the Administrative Team to develop the sushi department at Lassens
4. Ensure food quality and proper presentation of all foods items and that recipes are followed accurately
5. Follow all food safety regulations including proper labeling, dating, storage and rotation
6. Achieve required sales, margin, expense and labor targets
7. Know product availability, preparation, storage and nutritional aspects and ensure product mix meets varied customer dietary needs and requests
8. Ensure department orders for equipment, supplies and products are timely and accurate
9. Keep all cases and shelves clean, well-stocked and properly rotated
10. Maintain accurate retail pricing and signage
11. Control costs by maintaining accurate inventory of food, following recipes, and controlling loss.
12. Keep store leadership informed of all events that affect the department
13. Follow standard recipes as directed by the Executive Chef in order to ensure consistency, quality, and presentation of all food items.
14. Observe all deli policies, procedures, safety rules, cleanliness and sanitation, and Weights and Measures directives
15. If required, travel to multiple store locations to perform job duties
