At Leon's, a Sommelier is both a leader and a key source of support throughout service. A Sommelier’s primary responsibility is to possess an encyclopedic knowledge of Leon’s beverage program, and, more specifically, of our wine list. The Sommelier should serve as a poised, consistent presence on the floor, working closely with S ervers and Bartenders to assist our guests in designing an appropriate beverage experience for every occasion. Additionally, S ommeliers play an active role helping with food service and general table maintenance. They also assist the Beverage D irector and Assitant Wine Director via ordering, monthly inventory, and Service Team education . Additionally, as an extension of the Host/ Maî tre d ’ role, Sommeliers are expected to recognize regular guests, friends and family, hospitality industry peers/ Soignés /key press and reviewers, and warmly welcome first-time diners.
Responsibilities include:
- Enthusiastically and genuinely greeting guests, both upon arrival and departure
- Understanding and fully executi ng all Steps of Service
- Thoroughly and expedient ly execut ing all pre- and post-service side work
- Expert-like knowledge of all current menu items and specials
- Advanced wine knowledge
- Advanced knowledge of all current by-the-glass (BTG) wine selections, specialty cocktails, classic cocktails, and beer selection
- Proficiency in appropriate and dynamic food and beverage pairings
- Composed communication with FOH and BOH Management regarding specific guest needs, concerns, or conflicts
- TIPS certification
- Leadership in staff education
- Receiving and cellar maintenance
