Title: Executive Pastry Chef

Location: Miami, Florida, USA

Salary: $90,000 - $110,000 per annum

Benefits: Medical care contribution, 3-week holiday allowance


Smyth & Co are seeking an experienced Executive Pastry Chef to join our client’s luxury restaurant in Miami. The successful candidate will bring a creative flair with a blend of Mediterranean, French and Asian influences to the pastry program.

With a focus on excellence and innovation, our ideal candidate will have a proven track record in Michelin-starred restaurants, demonstrating expertise in managing high-volume pastry operations while maintaining longevity and consistency.


Responsibilities:

  • Collaborate on dessert and pastry menu planning and creation across multiple outlets
  • Innovate and create seasonal specials to enhance the guest experience
  • Conduct costing and evaluation for all pastry items in coordination with the cost control team
  • Manage recipe development and accuracy, ensuring consistency with operational standards
  • Train operational staff on new desserts and pastry launches
  • Regularly audit food quality and recipe adherence
  • Develop standard recipes and techniques to uphold quality and minimize costs
  • Evaluate pastry products to maintain high quality standards and cost efficiency
  • Liaise with Food and Beverage and Operations management to exceed guest expectations
  • Stay updated on the latest pastry and culinary trends and implement accordingly
  • Collaborate with various teams on menu descriptions, sourcing, and ingredient updates


Requirements/Qualifications:

  • Experience in Mediterranean, French and Asian-inspired pastry
  • Experience in Michelin-starred restaurants & high-volume pastry kitchens
  • Culinary degree (2- or 4-year) required
  • Minimum 10 years of experience in pastry kitchen managerial roles, preferably as Head or Executive Pastry Chef in high-volume settings
  • Excellent verbal communication and leadership skills
  • Strong attention to detail and organizational abilities
  • Proficiency in computer applications such as Excel and Windows
  • Ability to adapt and thrive in a fast-paced kitchen environment
