Job Summary:

As a Sushi Cook, you will play a crucial role in our culinary team, specializing in the art of sushi preparation and presentation. Your primary responsibility will be to prepare sushi dishes according to our restaurant's standards and recipes while ensuring exceptional quality and taste. The ideal candidate will have a passion for sushi, excellent knife skills, and a strong understanding of Japanese cuisine.

Responsibilities:

  • Prepare sushi dishes, including nigiri, maki rolls, sashimi, and specialty rolls, according to established recipes and presentation guidelines.
  • Ensure the freshness and quality of ingredients used in sushi preparation, including fish, vegetables, and rice.
  • Maintain a clean and organized workstation, including proper storage and handling of sushi ingredients and utensils.
  • Follow food safety and sanitation standards to ensure the safety of our guests and compliance with health regulations.
  • Collaborate with kitchen staff to coordinate timing and presentation of sushi dishes with other menu items.
  • Assist with inventory management, including monitoring stock levels of sushi ingredients and placing orders as needed.
  • Adhere to portion control guidelines to minimize waste and maintain cost efficiency.
  • Provide input on menu development and new sushi offerings, as well as participate in tastings and menu planning sessions.
  • Stay updated on current trends and techniques in sushi preparation, and continuously strive to improve skills and knowledge.

Requirements/Qualifications:

  • Previous experience as a Sushi Cook or similar role in a sushi restaurant or Japanese cuisine establishment.
  • Strong knowledge of sushi preparation techniques, including rice preparation, fish handling, and knife skills.
  • Familiarity with a wide variety of sushi ingredients and their flavor profiles.
  • Ability to work efficiently in a fast-paced environment, while maintaining attention to detail and quality.
  • Excellent communication skills and ability to work well in a team.
  • Flexibility to work evenings, weekends, and holidays as required.
  • Food Handler's permit or certification in food safety and sanitation preferred.
  • Culinary degree or certification from a sushi school is a plus.

Physical Requirements:

  • Ability to stand for extended periods and work in a fast-paced, high-pressure environment.
  • Manual dexterity and coordination for handling sushi ingredients and utensils.
  • Ability to lift and carry moderate to heavy loads, including boxes of supplies and trays of sushi ingredients.
  • Stamina and endurance to work long shifts and maintain focus on detail-oriented tasks.
