    Summary
    The Cook's responsibility is to plan, prepare and cook food items to ensure the highest quality service and experience for the guests. Help keep the kitchen organized and running efficiently.
    Pali Mountain's 250-acre alpine site is nestled in the heart of the San Bernardino mountains, 90 minutes from most of Southern California, regularly serving up to 700 guests per meal.
    Pali Mountain has 3 business units: a summer camp, an outdoor school, and a conference center.
    Meals are produced out of our 27,000 sq ft dining hall, which has one of the largest commercial kitchens in Southern California boasting state-of-the-art equipment and 5,500 sq ft of working space.
    Cook duties and responsibilities, including but not limited to the following:
    Prepare food to the specifications of a predetermined menu.
    Adjust food items to accommodate guests with allergies or specific dietary concerns.
    Prepare any necessary sauces or accompaniments before meal service begins.
    Prep ingredients and stock necessary cooking supplies as needed.
    Estimate expected food consumption to ensure all guests have enough food.
    Operate various kitchen appliances such as ovens, grills, charbroiler, fryer, etc.
    Handle and cook proteins (meats) based on recipes.
    Assist in managing staff in the kitchen and assist them during the food assembly process.
    Act as liaison to front-of-house employees to ensure proper food service.
    Assist with inventory management.
    Ensure proper food handling, sanitation and follow food storage procedures.
    Clean up after meal services.
    Qualifications:
    Ability to stay calm in high-stress situations.
    High attention to detail.
    Safe food and knife handling.
    Must have excellent time management skills.
    Team player with excellent communication.
    Must be able to stand the entire shift and lift and carry up to 50 pounds.
    Requires frequent reaching, bending, pushing, and pulling.
    Preferred years of experience:
    • 1 - 2 years supervisory experience in food service.
    • 1 - 2 years cooking experience, preferably buffet style restaurant.
    Salary and Benefits
    • $19 - $22 per hour.
    • Full time - must be able to work weekends, evenings, and holidays.
