Gravitas, a Michelin Star Fine Dining New American restaurant in Ivy City, is seeking a Sommelier. The ideal candidate will have 2-3 years of experience in running a fine dining wine list and selling on the floor.
ESSENTIAL RESPONSIBILITIES
Service and Employee Management
- Provide warm and knowledgeable service to all Gravitas guests
- Liaise with restaurant and outlet operations staff to ensure a seamless guest experience
- Assist in creating a culture encourages our staff to grow
- Support beverage and service teams
- Ensure consistent, thorough, and timely communication to peers, managers, guests, and vendors
- Continually strive to provide opportunities to advance the education and development of staff as it relates to food, wine, and service
- Assist in researching and conducting comprehensive beverage training for FOH staff, working in conjunction with Management
Wine and Beverage Oversight
- Ensure that safety, security, and loss control policies and procedures are complied.
- Maintain thorough knowledge of all wine, saké, beer, spirits, specialty cocktails, teas and sodas, and all non-alcoholic beverages.
- Take meticulous monthly inventory
- Oversee maintenance/cleanliness of all decanters, wine stations, and all storage areas pertaining to beverage
- Planning and maintaining storage of wine
General/Miscellaneous
- Understand and comply with all federal, state, county, and municipal regulations/ordinances that pertain to health, safety, and labor requirements of the farm/restaurant/inn, its employees, and its guests.
- All other duties as assigned by General Manager and Owner/Executive Chef
KNOWLEDGE, EXPERIENCE, AND SKILLS
- Have a minimum of 2 years experience in a similar position
- Have the ability to handle multiple tasks at one time
- Have excellent communication and organization skills
- Willing to work a flexible schedule and holidays
- Relevant experience in fine dining hospitality/restaurant operations
- Ability to work collaboratively across the organization
- Extensive knowledge pertaining to all aspects of winegrowing, wine production, wine styles, and regional wine laws pertaining to classic regions from around the worldThe ability to work in a standing position for long periods of time.
- The ability to stand, walk, stoop, bend, reach with hands and arms, and frequently lift up to 35 pounds and occasionally lift/move 50 pounds.
- The ability to climb stairs and ladders while carrying up to 35 pounds
