The Department of Corrections, Division of Institutions, is recruiting for a Food Service Lead position, at the Hiland Mountain Correctional Center (HMCC) located in Eagle River, Alaska.


***NOTE: This position is a Long-Term, Non-Permanent Food Service Lead Position***


What you will be doing:
The job duties for a Long-Term, Non-Permanent Food Service Lead at Hiland Mountain Correctional Center involve, but are not limited to:
  • Provide prisoners with nutritious, well-balanced meals served under proper sanitary conditions
  • Supervise approximately 30 inmate food service workers at Hiland Mountain Correctional Center in the main kitchen in preparation of approximately 1,200 meals per day
  • Train inmates in food preparation, cooking, baking, proper sanitation procedures, and receiving, storing, and thawing foods
  • Plan and supervise inmates in the preparation of special diets
  • Monitor inmates serving meals to ensure quality, quantity, and portion control standards are met
  • Receive and inspect food deliveries and ensure items are properly stored
  • Comply with safety and security procedures such as inmate counts, inspections, and searches of the kitchen, dining room, and storage rooms

  • Ability to communicate with staff, inmates, and the public
  • Be able to read, understand, and follow verbal and written instructions
  • Coach, mentor, assist, and counsel inmates as necessary
  • Ability to impartially make decisions based on the actions and behaviors of prisoners (Firm but Fair) and resolve conflicts
  • Plan and manage resources
  • Maintain a professional demeanor, especially in difficult or sensitive situations and maintain cooperative relationships with other employees and prisoners
  • Food Service experience
  • The ability to follow the directions of Supervisors, Facility Administration, and Security leadership

Minimum Qualifications
