Responsibilities
All duties and responsibilities are to be performed in accordance with HAL standards, USPH, HACCP, Environmental, Safety policies and procedures. Each shipboard employee may be required to perform various functions in food and beverage service venues throughout the ship as assigned by their supervisor or management.
- Reports to assigned workstation assignments on time, properly groomed and dressed according to HAL Standards. This includes a clean uniform, name tag, cap etc. and any other uniform related item.
- Assigned venue is according to individual's performance history and his /her ability to enhance the venue's unique concept, atmosphere, success and profitability.
- Promotes teamwork within venue to enhance sales performance and guest satisfaction.
- Provide fast, efficient professional mixology and coffee beverages to guests and crew in assigned venues including service bar areas.
- Provide accurate mixology and service for the Beverage Attendants as they would guests.
- Meet and exceed guest expectation with a 'guest comes first' attitude, connect with the guest and ensure they are met as per company's service standards
- Maintains safe and healthy work environment by following organization standards and sanitation regulations.
- Assists with new team member training by positively reinforcing successful performance and giving respectful and encouraging coaching as needed. Provides on-the-job training to Beverage Attendants and Beverage Runners to strengthen their current performance.
- Organizes and sets up the bar as instructed and is responsible to create an attractive display of bottles, glasses and merchandise.
- Conduct end of cruise inventories, checking par levels. Assist with spot checks throughout the bars at any given time and responsible for discrepancies.
- Confirms venue ambiance (lighting, temperature, music) according to standard time of the day. o Greets and engages with guests to answer questions and provide operational information.
- Actively promotes and sells beverage packages.
- Provide beverage service to package guests according to company standards.
- Sell and/or up-sell premium brands and maximize all revenue opportunity.
- Execute other beverage promotions according to execution guide instructions
- Suggests alternative drinks if drink request is not available in current inventory.
- Ensures bar appetizers, hors d'oeuvres and Bar snack cycle is followed and service is provided throughout the venue.
- Is aware of food allergies and is able to recommend alternatives when needed.
- Maintains, secures and cleans bar area. Ensures stations and/or tables are clean, orderly and properly set with beverage menus and clean ashtrays where applicable.
- Removes dirty glasses and empty bottles and returns them to the bar or galley.
- Works independently and without immediate supervision.
- Maintains accurate par levels and rotates stock according to management standards.
- Maintains inventory of liquor, mixers and other supplies utilized in the bar.
- Maintains an awareness of drink trends and makes recommendations to management regarding product trends.
- Responsible for ensuring that company standards for service of hot and cold beverages are being followed and standard drink recipes, including proper garnishes are adhered to.
- Helps to resolve in a satisfactory and proactive manner all service and product deficiencies and follows up on guest comments and/or concerns.
- Communicates information to Beverage Manager so that the team can respond as necessary to create the most efficient service possible.
- Maintains a clean and organized workspace at all times.
- May perform additional duties during special events and parties not located in assigned bars or lounges. o May work in outside weather conditions and is occasionally exposed to wind, sun heat and/or humid conditions.
- Attends meetings, training activities, courses and all other work-related activities as required.
- Asks for appropriate identification to determine minimum drinking age.
- May work in outside weather conditions and is occasionally exposed to wet and/or humid conditions. o Provides assistance for the set-up, service and break down for private functions and weddings.
- At the beginning and ending of each shift, completes side duties that include preparing the areas for service and ensuring proper closing procedures.
- Employee must occasionally perform additional duties to enhance overall guest onboard experience & other assigned non- revenue related support duties.
- Is fully responsible for the assigned bar stock, inventory and discrepancies. The Company holds the Bartender responsible
- Carry out inventories after each cruise under the guidance of the Controller/Beverage Manager
- Conduct pre shift meeting's and establish the daily revenue expectation and operational information to the team.
- Responsible for timely reporting of the wait staff and enforce uniform, grooming and hygiene standards. o Responsible to lead the team and ensure the flawless operation of the assigned location. Ensure that all wait staff in the assigned bar provide courteous and professional service at all times
- Ensure hot appetizers are served at the correct time and that bar snacks are set up in the lounge
- Ensure right measurements and recipes are practiced for cocktails, spirits and liquors, and standards are followed within the Mixology program.
- Be a brand advocate and socialize with guests when time allows, and provide accurate information regarding our programs, products and services.
- Ensure all vessel records and forms per Company policy, manual and directives are in the assigned area.
- Keeps equipment operating by following operating instructions; troubleshooting breakdowns; maintaining supplies; performing preventive maintenance; calling for repairs etc.
- Inspect assigned Lounge and Bar with respect to physical condition, condition of equipment and decoration to ensure prompt repair and maintenance through reporting to the Management
- Respond to changes in the Beverage Department as dictated by the vessel and the Company
- Maintain a good working relationship with own colleagues and all other departments as well as superiors and Head Office
- Maintain a high standard of personal appearance and hygiene at all times
- Have complete understanding of the Vessels Rules and Regulation and adhere to the regulations contained therein
- Ensure all Company policies and regulations are implemented, followed and maintained
- Ensure all efforts are made within the assigned bar to meet and exceed revenue budgets and guest satisfaction.
- Assist in the building of an efficient team of Staff by taking an active interest in their welfare, safety and development
- Motivate and train the subordinates team carry out on-the-job training at all times. In particular Beverage Attendants, Wine Attendants and Beverage Utilities are the responsibility of the Bartender
- Assists in the restocking of the bar locations and provision areas
- Attends meetings, training sessions, activities, courses and all other work-related activities as scheduled. o Successfully passes responsible service of alcohol training within first 7 days of contract.

- High school education or vocational; a minimum of two (2) years beverage-related experience and/or training; or equivalent combination of education and experience.
- Ability to speak and read English - analyze and interpret procedure manuals and memos, technical procedures or governmental regulations
- Ability to effectively present information and respond to questions from employees and customers.
- Ability to communicate and explain the terms and conditions of the beverage offerings to guests in a professional and positive manner.
- One to two years previous bartending experience, preferably in a 4- or 5-star restaurant, lounge, etc. o Basic knowledge of Knowledge of new and old-world wines.
- Supervision experience required - at least in the past in charge of one bar.
- Basic understanding of all technical machines used within the beverage department such as draft beer machine, coffee machine, etc.
- Ability to work independently and to quickly and accurately mix drinks according to mixology standards.
- Working knowledge of varying brands and quality of liquors and beers.
- Ability to investigate and solve passengers complains, follows up and meet/exceed guest expectations.
- Basic knowledge of beverage handling procedures with regard to public health standards. o Cost awareness and full understanding of inventory control and inventory taking.
- Extensive Mixology experience
- Strong interpersonal and leadership skills.
- Ability to train and guide assigned waiting staff.
- Excellent appearance, self-starter.

- Ability to conduct spirit tasting and cocktail demonstration in public for guests and staff.

- Completion of high school or basic education equivalency preferred.
- Actively follows responsible service of alcoholic beverages.
- Successfully completes responsible service of alcohol training and assessment within the first 7 days of contract.
- Must have completed at least one contract as a Beverage Attendant.
- Must have a passion for beverages and past experience in food and beverage service is preferred.
- Ability to give and receive instructions in written and verbal forms and to effectively present information and respond to questions from guests, supervisors and co-workers.
- Must have received overall exceed expectation more than twice in one contract. o Should not have any active warning or disciplinary actions.
- Ability to speak additional languages preferred.

- The employee must occasionally lift and/or move up to 20kgs.
- The employee must occasionally work in an environment where guests are permitted to smoke cigarettes and cigars.
- The employee must occasionally perform wheelchair duties, housekeeping support duties & other assigned non- revenue related tasks.
- The employee must be able to perform regular shifts in outdoor environments such as ship open deck areas and private island destinations.
